Caramel Popcorn (No Dairy or Cane Sugar).

I got sick of passing up on caramel popcorn. So I decided to have a shot at making my own. And it’s not bad and really easy to make.

Ingredients

Five cups of fresh popcorn

1 third of a cup of maple syrup or honey (I like the taste of maple syrup better).

1 forth of a cup of oil

1 teaspoon of salt.

Instructions.

Cover an oven tray with parchment paper. Spread out your popcorn across the tray. Put to the side of your stove.

In a small frying pan (I use an omelette pan) combine the oil, syrup and salt over a low heat. Cook the mixture slowly, stirring often with a wooden spoon. Cook the mixture down until the water is cooked off. This will take about five minutes. You will know it is done when a drop of the mixture turns into a small ball in a glass of water.

When your mixture is done, pour it carefully over the popcorn. Use tongs to toss the popcorn together. Place the tray in the fridge for about ten minutes to set.

You may like to add a little extra salt at the end. It depends on your taste. Enjoy with a nice black and white movie. I suggest the 1945 Agatha Christie film, And Then There Were None. It’s so good!!!!
