Chocolate Orange Marble Cake. Sugar & Dairy Free.

Otherwise known as ‘Jack and Cody’s Cake’, in honour of everyone’s favourite black and orange sausage dogs.


 For this cake you need to make two separate batters.

 Orange Cake.

A tablespoon of vanilla essence.           

Juice of two oranges.

Grated skin of one orange.

Half a cup of honey.

Half a cup of oil. (Your choice of oil, but I would avoid a strong, flavourful olive oil as this will not balance with the other flavours).

Half a cup of self-raising flour.

One egg

 

Chocolate cake.

Third of a cup of cocoa.

A tablespoon of vanilla essence.           

Half a cup of honey.

Half a cup of self-raising flour.

One egg.

 

In separate bowls mix up your cake batters.

Beat the flavour, honey and oil together.

Mix in your flour just enough to make it blend.

Then whisk in your egg just enough to make it blend. Adding the egg last will nicely aerate your batter but do not overwhip your ingredients at this point.

 

If you are using a regular pan, oil and flour the sides. I use a silicone loaf pan for this cake and it’s not an issue.

Alternately spoon the orange and chocolate batters into the pan. Once this is done, give the batters a slight flick through with a knife to create a marbled effect.

Bake in a preheated oven at 210 c (that’s 410f for my American buddies).

I bake it for around about 45 minutes. I just keep an eye on it until a knife inserted comes out clean.

Allow it to cool for about an hour before removing it from it’s pan. Enjoy!

Tips.

I’m not a very precise baker. I tend to just feel my way through things. I don’t use a regular baking cup, it’s more of a teacup size really, so if your cake is a little on the small side, you may want to scale up the ingredients. Just make sure you remember to adjust all the ingredients, and the results should still be good.


PS, my marbling did not go so great. I will have to try again. But I am happy with the contrast of the two batters, which is the main thing.
