Dark Chocolate Cake
Rich, delicious chocolate cake. You won’t be able to leave this one alone!
Ingredients
1 cup of oil
1 cup of maple syrup
1 cup of soy milk
Two tablespoons of vanilla essence
1 cup of cocoa powder
1 cup of desiccated coconut
1 and a half cups of self-raising flour
Instructions
Combine the wet ingredients.
Add the dry.
Mix together, just enough to blend the ingredients.
Pour the batter into a parchment lined spring form tin.
Pop into the oven at 220 °c (428 °F).
Cook for 30 minutes, or until an inserted knife comes out clean.
Allow to cool fully before releasing from the tin (the lack of eggs makes this cake delicate).

Tips:
This cake is so good, you really don’t need to explain to anyone it is vegan. It makes everyone happy, and you can add ice cream or cream on the side if you can eat that sort of thing. Strawberries are nice too! Nobody will recognize this as an ‘alternative’ dessert!
