Courgette Omelette

Mum and I like to split this for lunch, but it would serve just one, if you were really hungry!

Ingredients

Three eggs.

Half an onion, diced.

Half a stick of celery, finely sliced.

One courgette, finely sliced.

Oil.

Salt.

Seasoning of your choice.

Instructions

Caramelize the onion in a slosh of oil.

Add the celery. Cook until it is clear.

Add the courgette. Sprinkel in salt. Cook until it is soft and nicely browned.

Beat together three eggs. Pour across the courgette mixture. Cover the pan.

Cook until the egg is cooked, but still delicious and moist.

Serve with toast, butter and cheese (if you can eat it) pepper, and a nice little salad of rocket and cherry tomatoes.

This is the perfect break in a late summers day full of writing.
